Well these cookies did not last long after they came out of the oven! I’ve started throwing rosemary in pretty much everything lately and it’s finally reached the stage where it’s going in sweets. Don’t doubt it though – it’s amazing with orange!
- 125g softened butter
- zest of 1 orange
- 2/3 cup icing sugar
- 1/2 tbsp chopped rosemary leaves
- 1/3 cup polenta
- 1 cup plain flour
Preheat oven to 180C and line a baking tray. Sift icing sugar and beat with butter and orange zest until well combined. Stir in rosemary, polenta and sifted flour. Shape mixture into a rough 12in log and cut into 1cm slices. Place slices on the tray 2cm apart and bake for 15 minutes. Remove from oven and stand on trays for 5 minuets before transferring to a wire rack to cool.
Hershel especially loved the smell of these warm cookies wafting through the air!
