Delicious, delicious mulberries! Plucked fresh from a tree and kindly given to me from Brenda. They don’t last long after being plucked so straight into the pot they went to make a jam!
I’d never had a mulberry before. These were lovely, plump, a deep purple colour and were mildly sweet. I’ve paired them with my favourite spices, cinnamon and cloves to make the jam then thickened it with a few chia seeds.
To make the jam you will need:
- 2 cups of mulberries
- 1 cinnamon stick
- 4 cloves (use a spice bag so you don’t lose them in the jam like I did!)
- 1/4 cup chia seeds
- 1/2 cup of castor sugar
- 1/3 cup of water
Rinse the berries and remove the stems (they do stain so if you don’t want to explain black fingernails the next day, use gloves). Throw all the ingredients into a pot and bring to the boil. Take off from the heat when the jam has thickened. Remove the spices and allow the jam to fully cool before serving. Keep in an air tight container in the fridge.
