Makes 4 slices (yep, I ate one before taking the photo)
You will need:
- 3 thin slices of sourdough bread
- 10 cherry tomatoes
- 1/2 cup of chopped parsley
- 1/4 cup feta, crumbled
- juice of half a lemon
- 2tbs olive oil
Drizzle some olive oil on the bread slices and pop under the grill until nice and toasty on top.
Quarter the tomatoes and pan fry in some olive oil until slightly charred on the outside. In a bowl loosely stir together the parsley and feta with the lemon juice and olive oil. Top the bread slices with the parsley mix and then the tomato. Finish with some cracked black pepper.
