Perfect addition to your breakky! This will make about 6 small cakes.
You will need :
2 large corn cobs, shucked
1/2 cup plain flour
1 egg, beaten
1/2 cup of ricotta
salt & pepper for seasoning
In a large bowl mix together all the ingredients until a nice thick batter is formed. Place a large skillet over medium heat. Add enough oil to barely cover the bottom.
Test the heat by adding a small drop of batter to the pan, it should make a nice sizzling noise. Fill a generous tablespoon with the batter and drop into the pan. Flatten it down using the spoon so that it forms a disc. Fry in lots of 3 to prevent over crowding. Fry the cakes for 2 minutes per side or until golden brown. Drain on some paper towel while the second batch cooks.
Serving suggestion : Enjoy with streaky bacon, poached eggs & chives.
