Found another great use for the chia seeds in my cupboard! I topped my pudding with nectarines, pepita seeds and maple syrup but any fruit/nut combo would be great. Also if you don’t have almond milk – soy or skim milk would work just fine.
If you’re having this one for breakfast it’s best to make it the night before to give the chia time to swell.
- 2 tbs chia seeds
- 1/2 cup almond milk
- 1/2 cup greek yoghurt (or natural)
- 1 nectarine chopped
- 2 tsp pepita seeds
- 1 tbs maple syrup
- Combine chia seeds, almond milk, yoghurt and syrup in a bowl.
- Divide amongst two serving bowls (I just used small tumblers)
- The next morning top with the fruit and nut of your choice and drizzle with maple syrup.
